Dad and I had a blast roadtripping to the SFA’s “Global South” symposium and hanging out with rowdy food lovers of all sorts this past weekend. He’s a frequent SFA speaker, but it was my first rodeo. I found it enriching, delicious and way too much fun.

The diverse docket of programming included dialogue on Cuba and the American South, the Mesoamerican-Afro hot tamale and Viet-Cajun crawfish in Cali. Dad’s speech was titled “Houston: The South’s New Creole City.” He did a fine job of extolling Houston’s food scene while downplaying the scenery. But he was upstaged by the appearance of another Houstonian: the Masa Messiah himself, Chingo Bling.

Texas Oyster Forecast

Ben Nelson and Tracy Woody took me and seafood dealer Jim Gossen out on Galveston Bay to check their oyster leases yesterday. Jeri’s Seafood, named after Ben’s wife Jeri Nelson, owns around 800 acres of oyster leases in Galveston Bay. Tracy told me the recent cold snap had dropped the water temperature in the bay considerably and that the oysters had already begun to fatten.

CIA, Texas

The CIA San Antonio campus at the Pearl Brewery Complex on the north end of the Riverwalk is undergoing a major expansion at the moment. The new CIA building will celebrate its Grand Opening in October with an open house. CIA Antonio, officially became the Culinary Institute of America’s third campus in 2008. The school was founded to realize a dream – El Sueño – to elevate Latin American cuisines to their rightful place among the great cuisines of the world, and to expand diversity within the foodservice industry.
